Farm-Haus parsnip purée with Lineage coffee rubbed steak, a chimichurri sauce, garnished with local heirloom cauliflower & brussels leaves. Served with Phenolia (Canada) – a silky red blend with intense notes of red fruits and spices.
P is for Pie’s Fig with honey goat cheese and rosemary infused marcona almonds in a buttery and flaky hand pie crust. Served with Picpoul de Pinet (France), a delicate, fresh wine with hints of hawthorn blossom.
Wild Ocean Seafood’s yellowfin salad. Caught by indie fishermen off the coast of Florida, the yellowfin is paired with Terrapin Recreation Ale (Athens Georgia) – a light malty beer, with hints of citrus. day nights at the Audubon Park Community Market. WildOceanMarket.com
Keel and Curley Mad Man Hard Apple Cider (Plant City). Golden, with overtones of crisp green apple.
Kiwi Cuvee Chardonney (France), with notes of nicely ripe white fruit and dry fruit along with aromas of vanilla and toast.
The artisanal bakers at Buttermilk Bakery offered cheesy rye gougeres, paired with Hand Cabernet Sauvignon (South Africa); peppery, with notes of dark fruits.
Array of Sunchowder’s Emporia handcrafted pickled green beans, mushrooms and more. With Sierra Nevada Nooner, a classic German-style pilsner with spicy and floral whole-cone hops.
Bikes Beans & Bordeaux Café’s Tuna crudo – Ahi tuna topped with a soy sauce and wasabi foam, toasted black sesame seeds and garnished local micro greens. Paired with Cono Sur Bicicleta Sauvignon Blanc (Chile) – citrus notes of grapefruit and green apple, with faint herbal hints, finished with mineral notes.
Freshly baked Olde Hearth Bread Company pretzels served with honey mustard and paired with Fat Tire Amber’s flavors of buttery caramel malts, peppery hops and minerals.
Releaf Shiraz Cabernet Merlot (South Africa). This organically grown, fair trade certified wine is a balanced, earthy blend made from handpicked grapes.
Fatto in Casa’s Lavender Drops and Fior di Fragola Cookies. Paired with Monte Clavijo (Spain), noted for its conspicuous notes of green apples, lemon lime and fresh white fruit.
A sampling of Houndstooth Sauce Company’s delectable comfort food – handmade pimiento cheese, as well as their sublime chicken salad – both served open face atop Olde Heart Bread Company French bread toasts. Served with Lagunitas IPA; sweet and malty, with suggestions of pine.
Fatto In Casa’s almond bundt cake bites. Served with Berberana Gran Tradicion Brut Rose Cava (Spain), a balanced medium bodied sparkling wine with floral notes and a hint of raspberry.
La Femme Du Fromage’s Fromager d’Affinois, a French double-cream soft cheese made from cow’s milk, similar to Brie, except that the milk is ultrafiltrated first. With Keel and Curley Mad Man Hard Apple Cider. Based in Plant City, Florida, Keel and Curley makes their cider from fresh Pennsylvania apples – crisp with a bit of sweetness.
Subdivisions Pilsner by Red Cypress Brewery paired with rich, spicy Tasso Ham from Hinckley’s Fancy Meats. This crisp simple malt lager is spiced with Saaz hops and is microbrewed in Winter Springs. Hinckley’s Fancy Meats is owned by Chef Matt Hinckley, formerly of Box Park in Miami and Michelin-starred PUBLIC in NYC. Hinckley meats are available exclusively at Local Roots.
